Peanut Butter ~ Chocolate Mousse

So here it is, my first of hopefully many recipes to share with you!  This is something that I plan to do in 2013 is cook/bake more here at home for the family!  This was a super fun project that turned out to be a scrumptious hit Christmas evening for the entire family!

Peanut Butter ~ Chocolate Mousse (serves 12)

Ingredients: 1 qt. frozen chocolate yogurt softened ; 1 (3 1/2-oz. package of butterscotch pudding mix; 2 cups chunky peanut butter; 16oz whipped topping 2 (2.1-oz. butterfingers bars)

  1. Combine yogurt, pudding mix, peanut butter and whipped topping in a large bowl; mix quickly (so that yogurt remains frozen)
  2. Spoon yogurt mixture into a medium bowl; smooth top evenly with a spatula.  Or, you can do like I did and spoon into individual servings ~ jars, dishes, foil muffin tops cup liners etc…
  3. Place candy bars in a re-sealable plastic bag; crush with a rolling pin.  Sprinkle crushed candy evenly over the yogurt mixture.
  4. Freeze until mousse is firm (about 1 hour) Keep frozen until ready to serve. 

*make 24 hours ahead ~ mixture will tasty up to three days

*for a richer variation, substitute ice cream for frozen yogurt

We all know, half the fun is the packaging ~ so I bundled the individual servings up with twine, stamped some fun winter words and adorned them with bells and birds…

Awesome idea! And the packaging makes such a difference, doesn't it? So cute. I love to cook for my family.
On another note..... ;)
I've been drooling over flower seeds and things for spring, can't stop thinking about the gardens! I'm sure you are, too. Not quite ready for all those hours in the garden but dreaming of it for sure.
